Quick and Easy: Blueberry Lemon Oat Cookies
Sweet blueberries and zesty lemon with a sweet glaze. You will eat a whole plate...yourself!

Gather your ingredients
Makes approximately 15 cookies
1/2 cup salted butter
1 cup of dark brown sugar
1/2 tsp vanilla extract
1/2 tsp almond extract
1 egg
1 + 1/4 cup unbleached AP flour
1/4 tsp baking soda
1 + 1/2 cup oats
Sweetened condensed milk
1 lemon
Frozen Blueberries
WAIT- preheat your oven to 350°F
No time to waste. Once you mix your ingredients, you will be able to pop them right in!
Mix, Mix, Mix!
Step 1:
Mix the butter--softened, with the dark brown sugar until smooth and well combined
Add the egg, vanilla, and almond extract. Combine well.
Step 2:
In a separate bowl, mix together the AP flour and the baking soda well. Add this slowly (in four parts) to the butter/sugar mixture. Make sure to mix well so everything is well combined.
Step 3:
Roughly mix in the oats. I like to mix until it looks like there are plenty throughout the cookie dough.
Ball and Blueberry
Measure out one tablespoon balls onto a greased cookie sheet. roll them in your hand so they are a perfect round shape.
Gently press frozen blueberries into the dough balls. They should stick. Add as many as you want, but I find that 4-5 is best.
Bake for 10 minutes on the bottom rack and 5 minutes on the top rack.


Berry Beautiful
To finish off these golden delicious cookies, allow them to cool for about 8 minutes on the cookie sheet.
Dip each cookie in sweetened condensed milk (blueberry side down).
Place them on a serving tray after you dip them and grate lemon zest (to your liking) all over the cookies.
