A quick history lesson...

Empanadas have a rich history that spans across various cultures and regions. Originating from Spain, these stuffed pastries made their way to Latin America during the colonization period. Each country has put its own unique spin on the traditional empanada, resulting in a diverse range of flavors and fillings.

In Argentina, empanadas are typically filled with ground beef, onions, and spices, while in Chile, they are known for their seafood and cheese fillings. Empanadas have become a staple in many Latin American countries and are enjoyed as both a street food and a homemade delicacy. Their popularity has also spread to other parts of the world, with variations popping up in countries like the Philippines and India. Empanadas continue to be a cherished dish, capturing the essence of Latin American cuisine and serving as a symbol of cultural fusion.

How To Make The Dough

Start by mixing all the dry ingredients in a large mixing bowl. That would be the flour and salt.

Next, take the shortening and use a fork to press it into the flour mixture. keep pressing it down and dragging the fork as to combine the flour and shortening together. The mixture should look like sand. Now imagine you are at the beach!

In a separate small mixing bowl, combine all wet ingredients. The egg, vinegar, and water. Once combined, mix into the flour mixture (the "sand").

Once the mixture is pretty much combined and you can longer mix with a spoon, throw that spoon to the side and get those hands dirty! Press the remaining flour into the ball of dough and knead the dough until it is just combined. No more than two minutes. Overworking the dough is no good.

When you are ready to fill and fry:

When you are ready to fill these empanadas and fry them to enjoy, take the dough out of the fridge and roll them into mini balls (as pictured to the right). It helps to roll out consistent sizes.

Using a rolling pin, flour a surface and roll out your discs to about a 1/4 inch thick. Fill, close with a fork or fold like a pro.

All done!
