1. sauté the diced onion on medium heat for 5 minutes

2. add the corn, spices, dates and veggie stock and simmer for 30 minutes

3. to a blender, add the simmered corn, etc. and the coconut milk powder and blend until smooth.

4. serve with toppings of your choice and enjoy!

• 1/2 sweet onion diced roughly

• 2 cans sweet corn

• 4 cups veggie stock

• paprika

• cumin

• cayenne pepper powder

• pitted dried dates

• coconut milk powder
