A Puerto Rican classic, but Daniel Fast safe! This follows all the rules, and tastes so good that you cannot believe for one second that you are eating pure fruits and veggies!

Daniel Fast Canoa

INGREDIENTS

Step 1

  1. preheat the oven to 375 degrees Fahrenheit

  2. peel your plantain, do not cut it

  3. place it on a lightly oiled baking sheet and brush the whole plantain with oil as well.

  4. bake at 375 degrees Fahrenheit, for 30 min. after the 30-min, remove the plantain but do not turn the oven off, preheat it to 400 degrees Fahrenheit.

  5. while the oven is preheating, cut a slit into the plantain so that it resembles a canoe.

  6. add your "meat" into the slit and place it back in the oven for 20 minutes at 400 degrees

  • 1 ripe plantain

  • beyond or plant-based beef

  • garlic

  • onion

  • vegan queso

  • coconut oil

Ready to Serve

After your canoa is done baking, remove it and add sautéed garlic and onions to the top, and finish it off with your favorite vegan queso.
