Ingredients You'll Need

Before diving into the baking process, let’s gather the necessary ingredients. Here’s what you’ll need for our classic sourdough cinnamon rolls:

List for the rolls:
  • 1 cup active sourdough starter

  • 2 cups water(warm)

  • 1 tablespoon honey

  • 1 teaspoon vanilla extract

  • 1/2 stick of unsalted butter

  • 3 cups unbleached all-purpose flour

  • 1 teaspoon salt

  • Blueberry filling (store-bought or homemade)

  • 1/4 cup brown sugar

  • Plenty of your favorite cream cheese frosting (store-bought or homemade!)

List for the frosting:
  • 2.5 cups confectioners sugar

  • 1 teaspoon vanilla extract

  • 1/4 cup heavy cream

  • 2 tablespoons maple syrup

  • 1 teaspoon orange extract

Step-by-Step Instructions

Now that we’ve got our ingredients lined up, let’s get started!

1. Prepare the Dough: In a large bowl, mix the starter, water, and honey together until it forms bubbles. Then add the flour until combined to a shaggy dough. Allow this to proof for 30-minutes.

2.Knead and Rise: After the 30 minutes, combine butter, salt, brown sugar into a paste and knead the paste into the dough for 10 minutes. While you knead, use some flour to add to the kneading surface and to sprinkle on the dough as you knead until it is no longer sticky. After kneading, Leave the soft dough in a bowl to rise--covered. The second rise should be 2-4 hours until the dough tripled in size.

3. Roll Out the Dough: Once the dough has risen, punch it down and roll it into a rectangular shape, about 1/4 inch thick. Spread the blueberry filling.

5. Roll and Slice: Starting from one edge, carefully roll the dough into a log. Slice the log into equal pieces, about 1-2 inches thick.

6. Bake the Rolls: Preheat your oven to 375°F (175°C). Place the rolls in a greased baking dish. Bake for 35 minutes until golden brown.

7. Prepare the Icing: Mix the confectioners sugar, heavy cream, maple syrup, vanilla, and orange extract. Combine until smooth. If it is too watery, add confectioners sugar, if it is too thick, add heavy cream.

7. Enjoy! Drizzle with icing, if desired, top with fresh blueberries and strawberries, and dig in!

These rolls are a wonderful treat, combining the tangy goodness of sourdough with fresh berries. Perfect for a cozy breakfast, a special occasion, or brunch! Let the baking begin!
