A flancocho is a delightful dessert that combines the best of two worlds: the rich, creamy texture of flan and the moist, flavorful cake. It's a layered masterpiece that typically features a buttery cake base, a smooth custard filling, and a caramelized sugar topping. The result is a decadent dessert that is both visually stunning and incredibly delicious. The flancocho is a popular Latin American dessert, often enjoyed during special occasions and holidays. Its unique combination of flavors and textures makes it a favorite among sweet tooth enthusiasts. For our version, we'll be pairing a classic vanilla Duncan Hines cake with a creamy vanilla flan, adding a touch of Biscoff magic to both for an extra layer of flavor.

Luckily enough, the biscoff cake is the easiest part! Follow the box instructions on your favorite box cake or follow your own vanilla cake recipe. Either works great!
In this particular recipe, I replaced the oil and water in the cake recipe with milk and butter for a thicker and richer cake.
For the biscoff twist, crush the biscoff cookies into fine crumbs and swirl it into the cake mix. Leave the cake to the side to allow the crumbs to soak and soften.

Biscoff Flan:
Prepare the Caramel:
In a small saucepan, combine 1 cup granulated sugar.
Cook over medium heat, swirling the pan occasionally, until the sugar dissolves and turns a deep amber color.
Carefully pour the caramel into the bottom of the baking dish, swirling to coat the bottom.
Blend the Flan Mixture:
In a blender, combine the evaporated milk, sweetened condensed milk, eggs, vanilla extract, and crushed Biscoff cookies.
Blend until smooth and frothy.
One Crucial Step
When baking a delicate custard like flan, if you were to bake it directly in the oven, it could easily crack or curdle. A bain-marie prevents this by providing gentle, even heat.
Here's how it works:
Choose your containers: You'll need two: a smaller one to hold your food (like a baking dish for flan) and a larger one to hold the hot water (like a roasting pan).
Prepare the water bath: Fill the larger container with hot water, ensuring it comes about halfway up the sides of the smaller container.
Place the food: Set the smaller container with your food inside the larger one with the hot water.
Bake: Place the entire setup in the oven. The water bath helps to regulate the temperature and prevent direct heat from reaching your food, resulting in a smoother, more evenly cooked dish.
Why use a bain-marie?
Gentle cooking: It prevents your food from overcooking or burning.
Even heat distribution: Ensures your dish cooks evenly.
Moisturizing: The steam from the water bath helps to keep your food moist.
By understanding this technique, you can elevate your cooking skills and create more sophisticated dishes.
Bake, Decorate, & Serve
Prepare your pan: Choose a suitable baking dish, such as a 9x13 inch baking pan.
Pour the Flan: Pour the prepared flan mixture into the pan.
Layer the Cake: Gently pour the cake batter on top of the flan mixture.
Bake: Place the pan in a preheated 375°F (190°C) oven and bake for 1 hour.
Rest: Turn off the oven and let the flancocho sit inside for 20 minutes.
Cool: Remove the pan from the oven and let it cool completely on a wire rack for 2 hours or overnight in the refrigerator.
Serve: Carefully invert the pan onto a serving platter to release the flancocho. Decorate as desired and enjoy!
And there you have it, a decadent Biscoff Flancocho! This delightful dessert is the perfect way to end any meal. The rich, creamy flan, the moist, buttery cake, and the crunchy Biscoff cookies create a symphony of flavors and textures.
